So tonight, I was putting together dinner as well as a dish that is a great snack when I am at work.
One of the restaurants that I love going to is PF Changs, one of my favorite appetizers are the Shanghi Cucumbers. So we’ll start with these and then in Part 2 we will move on to dinner. I’ll go through the ingredieants and the steps of how to make them, then there will
For this you need:
- 2 cucumbers
- Coconut Aminos
- Apple Cider Vinegar
- Sesame Oil
- Sesame Seeds
- Cutting Board & Knife
- Vegetable Peel
- Aluminum Pie Pan
Step 1: Using the knife & cutting board, cut the ends of the cucumbers off. Then using the vegetable peel, peel the cucumbers and then slice in half.
Step 2: Using the spoon, scoop out the seeds of the cucumber. Once all of the seeds have been removed slice the cucumbers into roughly 1″ pieces, and place in the bowl.
Step 3: Grab a second bowl and mix the marinade together. You will need roughly 2 oz of coconut aminos (or soy sauce if you can have it), 1/2 a teaspoon of Sesame Oil, and 2 teaspoons of Apple Cider Vinegar.
Step 4: Turn on the oven to toast the sesame seeds. Place sesame seeds on the aluminum pie pan and place in the oven until they are a slightly golden brown.
Step 5: Pour the marinade over the cucumbers, and add the sesame seeds. mix together until all of the cucumbers are coated in the marinade and sesame seeds. Place in a air tight container and store in the fridge for up to a week.
And there you have it, homemade PF Changs Shanghi Cucumber appetizer. This is a great and super simple appetizer, it also works as a great snack for at work. Refr3eshing, healthy and it tastes AMAZING!
